The flavors of succulently natural canned tomatoes bank on the quality of the tomatoes used. Whether it’s made from whole or ground red tomato meat, they come in several different forms. Traditional forms are whole peeled tomatoes, packed in juice or purée, and ground tomatoes, sometimes referred to as “kitchen-ready.” Ground tomatoes are not to be confused with purée, which is similar but more cooked.

Taste tests made by Pegasus Food Futures reveal that whole tomatoes packed into juice are perceived to be more fresh-tasting compared to those packed in puree.
